11/2lb Hamburger
3/4C onion chopped
3/4 C Carrots chopped
3/4 C celery chopped
1tsp dried basil
1/4 tsp parsley flakes
4Tbsp butter
3C chicken stock
4C potatoes peeled and diced
1/4C flour
8oz velveeta cheese
11/2C milk
3/4tsp Salt
1/4tsp pepper
Brown and drain hamburger saute onion, carrots, celery, basil and parsley in 1 Tbs butter about 10 minutes. Add broth, potatoes and beef. Bring to a boil. Reduce heat, cover and simmer 10 to 12 minutes, or until potatoes are tender. In a small skillet, melt the rest of the butter, add flour, cook and stir until bubbly. Add to soup; bring to boil. Reduce heat to low, add cheese, milk, salt and pepper. Serve when hot.
To freeze, allow to cool and fill container or freezer bag. Thaw in fridge or on stove, heat and eat!
This recipe feeds our family twice. Also a great dish to take to potluck, camping etc. Take out of the freezer and put in a crock pot.
